Breakfast is one of my favorite meals, and I usually prefer it to be sweet rather than savory. This recipe is a great way to prepare oatmeal for those days where you are on the go or when you know you won’t have time to cook in the morning.
I often make two at a time, one to eat immediately and one for next morning. 30 sec. in the microwave and the one you left overnight will taste (almost) like it was freshly baked.
Because the main ingredient is protein powder, the macros are perfect for a healthy breakfast. Twice as much protein as carbs and almost no fat.
I usually eat it with a handful of berries and a large cup of coffee.
Of course, you don’t have to eat it as breakfast. Because it tastes like cake, it’s also perfect as a dessert, snack or after-workout meal.
Baked oatmeal cinnamon rolls are great for those days where you are on the go or when you know you won’t have time to cook in the morning.
- ¼ cup (20 g) oats
- 1 egg white (45 g)
- 1 scoop vanilla protein powder (1 oz. / 28 g)
- 2 tsp. Stevia
- 1 tbsp. cinnamon
- 1/3 Cup water
Preheat the oven to 325 F (165 C)
Blend oats, egg white and water until the consistency is smooth
Pour the mixture into a bowl and whisk it together with the protein powder and 1 tsp. Stevia (the mixture should be like thick pancake batter. Add more water if needed)
Pour half of the batter into a small nonstick pan and sprinkle with 1/2 tbsp. cinnamon and ½ tsp. Stevia. Pour the remaining batter over and sprinkle with 1/2 tbsp. cinnamon and ½ tsp. Stevia
Pull a knife through the batter to slightly mix in the cinnamon and Stevia
Bake for 25 minutes
If left in the fridge, reheat it for 30 sec in microwave before enjoying
